To create your lasting and most memorable experience our hotels offer three distinct manners of service, our service technique and pricing schedules are defined below.
Silver Service
It is the standard of our hotel to provide distinctively dressed and professional service staff. Uniformed, informed of the product to which they serve and trained in etiquette, you will find our service staff prepared in advance of the event for your arrival and flexible should the needs arrive for party revisions.
Gold Service
It is the standard of our hotel to provide distinctively dressed and professional service staff. Uniformed, informed of the product to which they serve and trained in etiquette, you will find our service staff prepared in advance of the event for your arrival and flexible should the needs arrive for party revisions.
Our Gold Service standard is 20% above the accepted practice in the hotel and catering industry and provides for 1 server for every 25 guests in a sit down setting or 1 server per 35 guests for a buffet.
The Gold Service Procedure is Formal with Courses Served in the Manner Detailed Below:
- Server Pre-meal
- Preset tables with a salad plate and soup bowl atop
- Our services staff will line up at the door and assist your guests in seating. Efforts will be made to assist all elderly and female guests will be approached to offer assistance to their table
- Our first course, soup will be served in a preset bowl Russian Style. Servers will approach the table with a soup tureen and personally portion all guests. We will have one server per table (ten guests) thus all soup will be portioned at the same time
- Soup bowls will then be cleared. One server will clear two tables while the other server prepares the next course
- Our second course, salad will be served Russian Style with a hint of French service. Two server will bring the salad bowl to the table with the lead server mixing the salad and the second providing the ingredients. Upon preparing the salad in a large mix it will be split into equal portions. The waiters will then split the salad mix into two bowls, proceed to their designated table and serve the salad course.
- The salad course will then be cleared
- The lights will dim
- Presentation music, preselected by the bride will begin to play
- A minimum of forty pre-plated meals will be brought to the floor, stacked ten per tray and covered with sterling silver plate covers. Lead waiters will remain on the floor to unplate the dinners and present them to your guests. Seconds will return to the kitchen once the meals are untrayed, however leads will remain on the floor
- Plate-up service will continue until completion
- Ample time will be given and then the the service staff will clear the dinner plates
- Upon clearing the entire room the dessert course will commence
- Dessert course is served
Assuming dessert is the wedding cake:
- The lights will dim
- The spotlight will illuminate with the cake in the spot, up on a small stage
- The bride and groom will approach and cut the cake
- A Chef will accompany the pair and plate the cake after the first piece is shared
- The cake will be cut, pieces dispensed and the stage removed
Assuming dessert is not a wedding cake, the hotel will use Hunter Style:
- We recommend an exciting, possibly flaming dessert
- Dim lighting
- The dessert is rolled to the spotlight by Chef or Chefs
- Fire illuminates and the spotlight is turned on
- Servers line up at post and table after table is then served, three at a time
Gold Service Price Schedule
Gold service far exceeds that of the service standards of the State of Arkansas and its surrounding neighbors. Silver service provides for a unique experience for your guests and memorable moments for the bride and groom.
- 50 - 75 Guests ~ $650.00
- 76 - 100 Guests ~ $950.00
- 100 - 125 Guests ~ $1250.00
- 125 - 150 Guests ~ $1450.00
- 150 - 200 Guests ~ $1650.00
To add to this dining experience we recommend consideration of additional captains to remain on the floor, a hostess, and the consideration of a professional emcee.
